Katia Duke farms San Isidro in the Copán region of Honduras at 1,300 meters. After studying agronomy at Zamorano Pan-American Agricultural School, she returned to her family’s land to build aspecialty-focused operation. Cherries are dry-fermented 18–24 hours in ceramic-lined tanks, washed with spring water, and dried on raised beds or concrete patio.
