I honestly didn’t expect this method to have such a dramatic impact on flavour. Because it’s such a new processing method, I was naturally curious. When I received the sample, I couldn’t believe what I was tasting. The funky character was unlike any fermentation process I’ve experienced before. It was incredibly expressive, yet so clean, sweet, and full of flavour. This is just the first Dark Room processed coffee we’re launching, and I’m confident it won’t be the last. I can’t wait to discover and share more exceptional coffees processed this way in the future. About the Coffee This was the town's first specially processed coffee under his leadership. Soon after, armed forces entered the village and took the men away, including Uncle Adumu*. The work was left unfinished, and the future became uncertain. What remains is this coffee. In the cup, it carries courage, care, and intention. It's a quiet legacy carried forward. This was the first experimental processing in Peace Town**, Hambela, led by Uncle Adumu*. Fresh cherries were sealed in food-grade plastic bags in dark room for 72 hours, then sun-dried on raised beds for 20 days with constant turning. *"Uncle Adumu" is a nickname commonly used by green bean buyers and roasters for a local Hambella smallholder producer / community figure, rather than an officially named estate. **Peace Town refers to a local community initiative or informal settlement in the Guji Gedeo region linked to peace-building or resettlement efforts.
