Parmigiano Reggiano PDO The Dairy, Farm, Animals & Maker Parmigiano Reggiano is an iconic cheese with over 900 years of history. The production zone is cherished and protected, and the cheese must be made in the provinces of Parma, Reggio Emilia, Modena and some areas of Mantua and Bologna, in Italy. The cheese make itself also follows strict traditions and must be made with raw milk, from cows that only eat grass and hay, and then must be aged for one year, though usually it is aged for significantly longer. Flavour Profile Our Parmigiano Reggiano is aged for a minimum of 3 years and has a hard, dense, grainy and gritty texture with a good saltiness from the abundant amino acid crystals. It is incredibly fruity, umami and savoury with nutty undertones and a sharp tang. Summary This cheese is aged for 3-4 years and is made with raw cow's milk and traditional rennet.
