Ethiopia Biru Bekele

This fully washed lot comes from Shakiso, where 310 smallholder producers have refined clean, bright processing into an art. Cherries are hand-selected, depulped within six hours of picking, and fermented 24–36 hours depending on ambient temperature. A multi-channel washing system clears any remaining mucilage before the coffee moves to raised beds for a slow, 10–14 day dry. The result is clarity defined by Guji’s unique biodiversity—floral aromatics, stone fruit sweetness, and a citrus acidity that rings clean through the cup.
