El Matazano, Honduras
Perched at 1,450 metres above sea level in the Sierra de Montecillos, Finca El Matazano is a five-hectare farm with around 21,000 coffee trees, shaded by native timber and fruit trees that help create an ideal environment for producing outstanding specialty coffee. The farm is run by Elvin Castillo, a smallholder producer from the Matazano community, where the farm takes its name. Founded by his father, Francisco Antonio Castillo, a pioneer of specialty coffee in the region. El Matazano continues a family tradition built on quality and care. Alongside managing the farm, Elvin also leads the cupping laboratory at CONEXH and holds a “5 Star National Cupper” diploma from the Honduran Coffee Institute. This coffee has undergone an anaerobic natural process, where whole cherries are fermented in a sealed, oxygen-free environment before drying. This process allows the sugars to develop and ferment in a more complex manner, producing a more sophisticated and nuanced cup. Expect a cup full of purple fruit sweetness with a rich base of chocolate. Sweet and sophisticated. Paired with milk, a delicious cup reminiscent of a creamy blackberry fool!
