Kilchoman Maury Cask Matured Unlike a cask finish, the Maury Cask Matured Limited Edition spent its entire maturation in ex-Maury fortified wine casks. Produced in the Roussillon region of southern France from predominantly Grenache Noir grapes, Maury wine is renowned for its rich sweetness and depth of flavour. Years of full-term maturation in these exceptional casks have infused the whisky with luxurious notes of dates, raisins, and dark honey, creating a rich, velvety sweetness. These wine-derived characteristics intertwine beautifully with Kilchoman's signature maritime peat smoke and vibrant citrus notes, resulting in a whisky of remarkable balance, complexity, and elegance. Kilchoman Distillery Kilchoman distillery is located on Islay. When it started operations it was the first distillery to be built there in some 124 years. The distillery carries out all the stages of the whisky making process on Islay. Some 25% of its malted barley is sourced from the local fields surrounding the site. Kilchoman distillery has expanded its prodcution capacity once and will do so again in 2018. For such a young distillery it has been a fantastic first decade. It looks like the future is smiling to them.
