Colombia Rodrigo Sanchez Cold Washed Filter

This coffee comes from Finca Monteblanco in Huila, Colombia, managed by Rodrigo Sánchez Valencia. Ripe cherries are pulped, sealed in GrainPro bags, and fermented for approximately 76 hours at 10–14 °C in a controlled cold environment. This slow fermentation allows for even development before the coffee is washed and dried, resulting in a cup that is clean, structured, and complex. We chose this coffee for its bright, distinctive profile. When first cupped by our team, it reminded us of candy, hibiscus, and lemon — a character shaped directly by its precise fermentation process and careful post-harvest handling.
