Woodlawn Waverley Vineyard Chardonnay 2021

This site has always provided Evans with the pure fruited component of the Dog & Wolf. It’s a site that seems to hold its acidity, and the wines are lacy and bright with line and length. Fruit is fermented in second use 500L puncheons and sees a small portion of malo. It spent 10 months in barrel before being transferred to tank to rest on light lees for a further four months.
