Zitara Pinot Blanc · Limited Edition · 2 × 750 ml A pure Pinot Blanc, the kind almost no one makes in Bulgaria. The grapes come from a vineyard near Hisarya, tended by the brothers Lyuben and Delin Dochev, and Petar searched for years before he found it. The wine has spent time in oak barrels, but the wood doesn't dominate: it comes through as roasted nuts behind the white flowers. The body is soft, and the fresh acidity keeps it balanced to the end. Crémant de Bourgogne ZITARA · 100% Chardonnay · 2 × 750 ml Sparkling wine from Burgundy, made by Cave de Lugny, a cooperative winery founded in 1926. The grapes come from the Les Crays terroir near Saint-Gengoux-de-Scissé, on marl and limestone soils. The wine ages for 24 months on fine lees, which gives it its creamy texture and fine bubbles. On the nose, white peach, mirabelle plum, citrus peel and toasted bread take turns. Zitara Riesling · 2023 · 2 × 750 ml Pale color with green hints. The nose is fresh and mineral, with peach and quince, backed by honey, smoke and acacia. The body is delicate, and the finish stays dry and mineral. When to open The Crémant likes to be well chilled and works from the aperitif onwards. The Pinot Blanc calls for food and a conversation that takes its time. The Riesling is for when you want something dry and mineral, with no heaviness.
