La Macarena (Yellow Typica), Colombia

About this coffee We return to La Macarena, one of Wilton Benitez’s projects that best represents his approach to coffee: precision, control and a constant search for new expressions within the same farm. After previously working with his decaffeinated Red Bourbon, this time we return to La Macarena through Yellow Typica, a variety that reveals a completely different side of the project. Wilton approaches every lot with an extraordinary level of attention, from cherry selection through the different stages of processing. The aim is not simply to increase intensity, but to ensure that each variety retains a clear and recognisable identity. In this Yellow Typica, that precision translates into an especially aromatic, clean and defined cup. In the cup The first impression is floral. Hibiscus brings a delicate, slightly fruity character, accompanied by the freshness of lime. Honeysuckle adds a sweet and perfumed quality, while lemongrass introduces a citrusy, herbal tension that extends the finish. It is a bright, clean and highly aromatic cup. More than intensity, what stands out is precision: distinct floral and citrus layers gradually revealing themselves and continuing to evolve as the coffee cools. Why we selected it For our TOP coffees, we look for lots that stand out not only through intensity or rarity, but through the precision with which each element is expressed. This Yellow Typica has exactly that quality. Hibiscus, lime, honeysuckle and lemongrass appear with unusual clarity, creating a complex cup without sacrificing elegance. Returning to La Macarena allows us to discover another expression of Wilton Benitez’s work. Same place. Another variety. A completely different expression.
