Pierre-Yves Colin and Caroline Morey founded their Côte de Beaune domaine in 2001 from inherited family parcels—he the son of Marc Colin, she the daughter of Jean-Marc Morey—and now farm 13 hectares across Saint-Aubin, Chassagne, Puligny, Meursault, and Santenay sustainably, with sons Mathis and Clément now alongside. The Champlots Premier Cru sits on east-facing clay-limestone slopes in Saint-Aubin, the cool, high-elevation appellation prized for tense, mineral Chardonnay. Whole-cluster pressed and fermented in 350-liter demi-muids (30% new), aged 15–20 months without bâtonnage, bottled unfiltered. Lemon pith, white peach, hazelnut, and crushed flint over a chiseled, saline core.
