This Aberlour spent 9 years in ex-bourbon before being transferred into a 1st fill Ximénez-Spínola Pedro Ximénez sherry cask for a 2 year finish. So far, straightforward. But the cask tells a different story. The barrel is stamped Pedro Ximénez. The cask end is tagged Oloroso. Ximénez-Spínola is a small, iconoclastic bodega in Jerez that has never been bound by convention. We believe this cask held a dry, Oloroso-style sherry made entirely from PX grapes. No sun-drying. No residual sweetness. The PX grapes were fermented dry like a fino or Oloroso, then aged under oxidative conditions. The result is a cask with the nutty, savoury depth of Oloroso and the grape richness of PX in a combination that almost nobody produces. When we saw this oddity sitting in a warehouse in Scotland, we knew immediately. You do not pass on a cask like this. Distilled December 2014. Bottled April 2026. Single cask. Cask strength at 57.7%. Non-chill filtered. Natural colour. Distillery profile, Aberlour Founded in 1879 in the heart of Speyside, nestled between Ben Rinnes and the River Spey in the village of Charlestown of Aberlour. Known for a rich, full-bodied house style built on short fermentation, broad-shouldered stills, and a long history of sherry cask maturation. Aberlour has always had an affinity for sherry wood. The distillery's A'Bunadh range is one of the most celebrated sherry-bomb expressions in Scotch. At 11 years with 2 years in active sherry wood, this expression captures Aberlour's weight and fruit without the spirit becoming secondary to the cask. Cask profile, Ximénez-Spínola PX "Oloroso" Ximénez-Spínola is one of the few bodegas in Jerez that works exclusively with Pedro Ximénez grapes. Most PX sherry is made by sun-drying the grapes to concentrate sugars before fermentation, producing an intensely sweet wine. This cask appears to be the exception. The Oloroso designation on the cask head suggests the PX grapes were fermented to dryness and aged oxidatively, producing a nutty, complex, savoury sherry rather than a sweet one. The result in the whisky is layers of walnut, dried fig, tobacco leaf, and dark chocolate without the treacle-heavy sweetness that a traditional PX cask can bring. This is not a cask you find on a list. This is a cask you find once. Tasting notes Nose Sweet and inviting with no alcohol burn despite 60% ABV. Fresh fruit up front that settles into something baked and warm, like a fruit-topped butter cookie. A quiet undertone of toffee and vanilla sits underneath, never competing. Palate Hits like hard fruity candy at first, bright and concentrated. If you grew up eating Gushers, that burst of fruit is here. It warms quickly and shifts to something richer, a velvety sweetness like sugar-coated dried fruit. Full bodied on the tongue with building spice toward the back. Finish Long, well over two minutes. Starts sweet and evolves slowly into warm spice with a rich, lingering tingle. The kind of dram that makes you want to sit by a fireplace and think about nothing and everything. A second sip brings back the rich fruit and adds sherry-kissed vanilla cookies I want to enjoy with a sunset.
