Epoch 3 - El Indio
EPOCH 3 is where the flavors get funky! With complex tasting notes, this coffee is fruity and floral, perfect for those who enjoy a more adventurous cup. _____________________ El Indio is back — and this year's harvest is the juiciest we've seen. A returning favourite from Planadas, Tolima, this natural-process Caturra is produced by 175 co-operative members under ASOPEP — an association dedicated to quality, sustainability, and building cupping knowledge at the farm level. The result is a coffee that's carefully considered from cherry to cup. This coffee was carefully hand-picked to select only the ripest cherries, then hand-sorted to remove any defects. It is sundried on raised beds under temperature-controlled conditions until a moisture content of 11% is achieved — naturally processed in cherry at 25 degrees Celsius. Finca La Planadas in Tolima grows and processes some of the most vibrant coffee we carry here at our roastery. Grown at high altitude across some of Colombia's most celebrated coffee-producing land, El Indio is complex, fruit-forward, and built for those who enjoy an adventurous cup.
