INFORMATION TASTING NOTES VARIETIES Luis Miranda is the architect of this coffee. Luis cut his teeth growing organic vegetables outside San Francisco before moving to Panama to produce the amazing coffees at Finca Momoto. He and I partnered up to build Finca Massif in Nicaragua, where Luis grew up. Massif consists of two farms, one in Matagalpa and the other in Nueva Segovia. He insisted on planting exotic coffee varieties, which will sell for ungodly sums of money, but as we wait for those to mature, we have this. A beautiful anaerobic natural from some of the working-class coffee varieties that have blanketed the mountainsides over the past few decades.
