2022 Domaine Fernand & Laurent Pillot Pommard Tavannes

Domaine Pillot is a small family estate in Côte de Beaune, farming organically with low yields and using gentle extraction and oak ageing to highlight the site’s personality. Tavannes is a classic Pommard site with clay‑limestone soils that give structure, depth, and a touch of mineral lift. The 2022 opens on red and dark cherry, blackberry, and a hint of spice, with subtle earthy and floral notes. On the palate it’s firm yet supple, with fine tannins, bright acidity, and a mineral edge keeping the wine focused. The finish is long and persistent, with lingering fruit, gentle spice, and a soft savoury note. Approachable now with air, but built to develop over 5–10 years.
