Chocolate Pécan Tart

One of the best creations of Fôu which combines three types of chocolate from different origins with different cacao percentage. The tart is filled with a 60% chocolate ganache and topped with an extremely rich whipped cream combining a 40% milk chocolate and a caramelized white chocolate. This trio chocolate combination is complemented with a melting pecan praline insert and a touch of sea salt that puts the pastry on a whole different level.
