Mexico - Sakubel
Sourced from Los Altos de Chiapas, Southern Mexico. Sakubel represents the work of farming families from the communities of Tenejapa, Chenalhó and Oxchuc; comprising several generations’ of producers between 25 and 60 years old - their livelihoods are deeply rooted in family-based agriculture. The more we learn, the more we understand Mexico as an origin like no other - a huge potential for quality and it’s starting to get the recognition it deserves. In the remote regions where we’re buying coffee, farmers are using organic and traditional production methods, following low-intervention practices. This mountain or “rusticano” system means that coffee trees grow under the protective shade of native and fruit trees, developing in harmony with the environment. Such small plots of land, with low yields make these harvests rare and sought after - we’re proud to share this lot with you.
