When choosing a new coffee, we naturally reach for familiar origins or varieties we already love. That's why we do blind cuppings—to strip away bias and meet the coffee purely as it is. As we were tasting through the samples, we couldn't help but ask aloud, "Has there been a coffee in recent years that defies expectations quite like this one?" Indonesian coffee has shattered all expectations in the most incredible way. Proving its worth entirely through its flavour profile, it has easily become one of the origins we are most excited about. This coffee comes from a mill founded in 2016 by Yolan Tirta in Gowa, South Sulawesi, Indonesia. As a third-generation producer, Yolan has introduced advanced cultivation and processing techniques, breathing fresh life into coffee farming across the region. This Typica variety opens with a bright pop of blueberry acidity, moves into crisp green apple, and finishes with a lingering sweetness like milk chocolate.
