Steel cut oats are that same groat run through a steel blade and chopped into two or three pieces. Cutting is irreversible, so the choice comes down to one question: do you want to do the processing yourself? Buy groats if you own a flaker or roller and want to make your own rolled oats, if you want to cook oats whole like rice or barley, if you sprout, if you plant, or if you are storing food long term. Buy steel cut if you want breakfast porridge on a weekday morning and are never going to roll your own. The intact kernel also stores better.
