Blue #2 Santoku Knife 165mm
Blue steel Santoku Knife 165mm A compact Japanese all-rounder combining a high-carbon Blue Paper Steel cutting edge with practical stainless steel cladding. Santoku – The Japanese All-Rounder The santoku is Japan’s most popular all-purpose kitchen knife. Its name means “three virtues,” referring to its ability to handle meat, fish, and vegetables with equal ease. With a shorter, taller profile than a Western chef’s knife, the santoku offers precision, control, and versatility in everyday cooking. Its flat edge excels at push-cutting and chopping, while the wide blade makes it easy to scoop and transfer ingredients. Blue #2 Steel Blue #2, also known as Aogami #2, is a traditional Japanese carbon steel alloyed with tungsten and chromium to improve wear resistance and edge retention. It takes a very fine, sharp edge and holds it well, while offering a good balance of toughness and ease of sharpening. Blue #2 is a reactive carbon steel and will develop a natural patina through use. It requires regular cleaning and thorough drying to prevent rust. Steel Care The stainless cladding is low maintenance, but the exposed Blue Paper Steel cutting edge can develop a patina and will rust if left wet. Hand wash and dry thoroughly immediately after use. Never leave the knife soaking in water or put it in the dishwasher. A patina developing along the exposed carbon steel is completely normal and will change naturally with use.
