Masala Chai Loose Leaf Tea – Traditional Indian Assam Chai A family chai recipe, passed down through three generations. This isn’t a chai recipe created in a development kitchen. It’s the masala chai I grew up with. The recipe was passed down from my grandma to my mum, and then from my mum to me. It’s the chai we make at home: strong Assam black tea blended with fragrant cardamom, warming cinnamon and ginger, fennel, star anise, cloves and a touch of black pepper. Now I’ve put our family blend together for you, so making a proper cup of masala chai at home is a little easier. Proper masala chai must be brewed in a pan. For 1 large portion of masala chai, add 1 tbsp of Masala Chai Loose Leaf Tea to 250ml (1 cup) of boiling water in your pan. Also add 1 tsp sugar. Simmer on a high flame for 5-8 minutes for a strong infusion. Add 1/2 cup milk or a plant-based alternative and simmer for another 3 – 5 minutes. Strain and enjoy a rich, flavourful cup of authentic masala chai!
