The coffee undergoes 24 hours of oxidation in sealed, anhydrous-grade containers, followed by dry pulping and a 72-hour submerged fermentation alongside yeast, kiwi, and lulo, a combination designed to draw real fruit character into the cup rather than layering it on after the fact. Once fermentation finishes, the coffee dries for 76 hours at a controlled average temperature, then rests in GrainPro bags to lock in freshness until it's ready to ship.
