A generous section of natural honeycomb suspended in luminous Suffolk Borage Honey, delicately floral and beautifully clear. Gathered by bees foraging amongst fields of star-shaped blue borage flowers near Haverhill in the Suffolk countryside, this unusually pale golden honey is prized for its light, clean flavour and subtle floral sweetness. Presented in a traditional Kilner jar. Serve the honeycomb on a classic cheese and charcuterie board or drizzle the sweet honey onto a delectable assembly of warm sourdough, salted butter, ripe figs and soft goats cheese. Or for a more traditional pleasure, enjoy a generous piece of honeycomb pressed into warm, buttered toast at breakfast. Our honey is raw and unpasteurised, meaning it is gently extracted and lightly strained without high heat or heavy processing. This helps preserve its natural character, including the delicate enzymes, pollen, and aromatic compounds that give each batch its distinctive flavour and depth. Because it remains in its most natural state, raw honey may also crystallise over time - this is a normal sign of quality rather than a flaw, and can be easily softened if preferred (please see storage instructions). The result is a more complex, full-flavoured honey that reflects the landscape and season in which it was produced.
