Fruity, vinous, and complex aroma, with notes of intense red fruit and cassis. On the palate, it is very fresh and engaging, with well-integrated oak. Good volume and excellent ageing potential. Food Pairing Pairs well with any braised meat dishes, game, and hard cheeses. Best served at 16ºC. Vineyards This wine is made from grapes sourced from a vineyard plot aged between 20 and 30 years. Vinification Crushing and destemming of the grapes. Fermentation in granite lagares with foot treading at 25ºC, with periodic pump-overs to extract phenolic compounds. Co-inoculation of fermentation yeasts and lactic acid bacteria to enable the simultaneous completion of alcoholic and malolactic fermentation.
