Sam Kim, August 2024. 2010 Cordon Cut Sauvignon Blanc: Wine Showcase 91 Points. COLOUR: Bright yellow gold. TASTING NOTES: The fresh lychee, lime and candied lemon peel aromas are now leaning more towards a fig jam complexity with some sweet roasted nut overtones. The initial primary fruits and citrus notes have evolved into complex marmalade, semi dried figs and candied peel with a roasted cashew sweetness on the finish. The wine still has an impeccable line and while the acidity is a little softer now, it lingers in the mouth supporting a delicious finish that is delightfully clean. It is amazingly fresh and crisp for a 16 year old wine. Enjoy with a soft blue, gooey brie or triple dark chocolate mousse. The Long Paddock Driftwood when ripe and runny is criminally delicious and a perfect match. FOOD MATCHING: Enjoy with your favourite dessert or artisan produced Australian cheese. WINEMAKING: The story of the 2010 Cordon Cut wine starts well before the grapes were harvested. The canes with the fruit (called “cordons”) were cut and left to hang on the trellis wire for several weeks prior to harvesting. This concentrates both the flavours and the sugars as the berries dry out, starting to look a little like sultanas. Assessed daily, the grapes were eventually harvested and pressed into stainless steel tanks. After cold-settling for a week, a small percentage was racked off for barrel ferment while the rest was inoculated and fermented in tank. Specialist yeast strains were used to accentuate the already abundant aromas and intensify the fruit flavours. After eight months of barrel ageing in French oak, the 2010 Cordon Cut Sauvignon Blanc was carefully blended and bottled in January 2011. With over fifteen years of bottle age this wine still shows lively flavours and a crisp lemon sorbet finish. A delightful aperitif that can be enjoyed lightly chilled, it is also an ideal accompaniment to artisan cheeses where it is best served at room temperature. Only a few cases remain, making this a rare opportunity to enjoy a true museum wine.
