Since the beginning, Villa Pastora has been a family business. Generations of producers have worked on this farm, handing down knowledge and sharing their passion throughout the decades. Today, Villa Pastora is more than just a farm. It is a community hub, where they support locals through creating job opportunities, offer advice on post-harvest techniques, and support neighboring producers who lack infrastructure (for example, by offering drying services). The farm has always employed sustainable farming methods while focusing on quality. This lot of Pink Bourbon is fermented in tanks, submerged underwater for 96 hours. Then, the beans enter a mechanical dryer for 48 hours, before finally resting for 14 days in a drying shed. This results in amplifying the sweet characteristics of Pink Bourbon like strawberry cream and milk chocolate, with a hint of tropical notes that of a mango.
