Expansive, flat, white flowers give way to clusters of black elderberry fruits in late summer. The fruit can be used to make delicious jams, jellies, pie filings and elderberry wine. Elderberry has many health benefits. Elderberries are particularly rich in flavonoids, especially anthocyanins which are responsible for their deep purple (almost black) coloring. These powerful antioxidants work to keep the immune system strong and resilient. Do not eat the berries fresh--they must be cooked before eating.
