Size: 1.68 ha (4.15 ac) Variety: Chardonnay Vine Age: Planted in 2000 Terroir: Above the village of Saint-Aubin, seated between the middle and lower sections of a southeast-facing slope, with shallow, stony, clay soil over a hard limestone bedrock (the middle section is steeper and contains more limestone). Viticulture: Sustainable, organic methods Vinification: Crushed and pressed, settled overnight, ambient yeast fermentation and aging for an average of 24 months on the lees in 300 and 600 L barrels (mostly used), aged for an additional 6 months in tank, fined and filtered if necessary, SO2 only added during aging (typically after the first year).
