The Sidra variety — known for its exceptional cup clarity and complexity — is given room to express itself fully through a meticulous washed process that preserves every nuance of the terroir. At 1600 metres above sea level, slow-ripening cherries develop a layered sweetness and a delicate structure that sets this coffee apart. Each cup is an invitation to slow down.
