SRC Etna Bianco
In 2013 husband and wife Rori and Cinzia along with their daughter Sandra began to farm organically with old vines (50-120yrs old) at altitudes between 650 and 1000 meters on Mt Etna, and they called this project SRC. They work with a number of varietals indigenous to Sicily, including Nerello Mascalese, Carricante, and Grecanico, along with international varietals like Grenache. Everything is hand harvested and they work with low intervention. In short, they do everything right. Their Etna Bianco is a blend of Carricante and Grecanico that is made in their low intervention spirit, sees a very short 12hr maceration, and after spontaneous fermentation sees aging in stainless steel tanks. In one word, radiant. This is high-toned, mineralic, and deeply volcanic in spirit. Fruits of yellow plum and green apple are accompanied by preserved lemon, caramelized fennel, and white flowers. Ashy smoke and an intense saline character are of course present as well in a wine that any Etna drinker would deeply love.
