A delightful ash-laced goat’s milk cheese made by one of the pioneers of American artisan cheesemaking, Judy Schad of Capriole Cheese in Indiana. Sofia is inspired by the famous Loire Valley cheeses. Aged a scant two weeks this super light, super fresh and slightly tangy cheese is an absolute delight to behold.
