The family began farming in the Alto Chiquero area during the 1970s and moved more seriously into coffee production in 1996, later expanding into areas including El Salto and Alto Quiel. These mountain farms are known for their varied microclimates, shade and soils rich in organic matter. José Luis Chevas represents the third generation of the family. Inspired by his grandfather’s work, he established Chevas Coffee Estate in 2016 at the age of 18. Today, he works alongside Adrian Villarreal, the 2020 Panama Barista Champion, combining agricultural knowledge with a barista’s perspective to develop distinctive Geisha microlots and experimental processing methods. Processing method For this lot, ripe Geisha cherries are processed using the natural method, meaning the fruit remains around the seed throughout drying. This encourages a fuller expression of sweetness, fruit and aroma. The cherries are then dried using Chevas’ Dark Room Drying approach. Instead of relying entirely on direct sunlight, the coffee completes its drying inside a protected environment, allowing the producer to manage the drying curve more gradually. On other documented Chevas lots, the dark room has been used to preserve floral character, cleanliness and structural balance in the finished cup. The result is an expressive yet refined Geisha: aromatic and fruit-led, while maintaining the clarity and tea-like finish associated with the variety.
