The palate is beautifully balanced, showing layers of orange blossom, biscotti and crisp green apple, supported by a distinctive mineral line and fine acidity. Extended lees ageing contributes a creamy texture and remarkable depth, leading to a long, elegant finish. VITICULTURE & VINIFICATION Hand-harvested 60% Chardonnay and 40% Pinot Noir fruit was gently pressed, with only free-run juice selected for fermentation. Following full malolactic fermentation, the wine underwent secondary fermentation in bottle using the Méthode Traditionnelle, before spending a minimum of five years on lees. Each bottle was hand riddled and disgorged prior to release. VINTAGE CONDITIONS The cool-climate Adelaide Hills provided ideal conditions for premium sparkling wine production, allowing fruit to retain natural acidity while developing flavour intensity and elegance.
