Herb-infused Pinot Blanc from Rheinhessen — two weeks of semi-carbonic maceration with seven foraged plants. Aromatic, wintery, and completely its own thing. Jas sources Pinot Blanc from Niklas Rückrich's organically farmed clay soils in Eckelsheim, then co-macerates for two weeks with scots pine, wild carrot, lichen, dock, thistles, douglas fir, and oregano — all foraged fresh. Aged in old barrique, zero sulphites, bottled by hand. 200 bottles made. Jas's own description: "like walking into the living room on Christmas day, with candles lit, a Christmas tree decorated with orange slices and cinnamon." It lands exactly like that.
