Like most desi breeds, Gir cows carry the A2 beta-casein gene, which is what separates their milk from the crossbred milk that fills most of the market. Our milk comes from Gir Cows only. We work with a single herd instead of pooling milk from collection centres, so every batch traces back to the same animals — and to the same genotype. How it's made Whole Gir cow milk, set into curd overnight. Churned to butter, then simmered on a slow flame until it turns grainy, golden and smells faintly of caramel.
