Quady Elysium Black Muscat (Half)
Quady is the only winery in California to put a complete focus solely on sweet or aperitif wines. This Elysium Black Muscat was born in 1983 when Andrew Quady purchased the grapes from a church that used to make them into sacred wines until ceasing operations. The grapes are crushed, chilled and allowed to macerate, by adding wine spirits to arrest the fermentation, this preserves the sweetness in the wine. The name stems from the smell of roses in the winery! Elysium. . . . . . . “state of eternal bliss” in Greek. An aroma of roses accompanies dark fruit – cherry, strawberry – balanced with fruit acidity to finish clean. Elysium is wonderful with cheeses, especially goat cheese or Gorgonzola. It also pairs fantastically with desserts containing red fruits, such as English Summer Pudding, with dark chocolate and with cream desserts and cheesecake. Elysium poured onto vanilla ice cream is an effortless favourite.
