Foxtail Millet

Foxtail Millet (aka korra beeyam) is an ancient grain, popular millet variety in the south. This product unpolished, chemical-free and cultivated by small holder farms in the Anantapur district under the Timbaktu Collective. Highly nutritious - high in fiber and protein, low glycemic index and rich in minerals ( iron, calcium, magnesium, and manganese). This can be cooked in a pressure cooker or on a stovetop and serves as a perfect substitute for rice in lemon rice, curd rice, or as a base for salads. Always soak the unpolished grain in warm water for 1–2 hours before cooking. The rice is PGS certified organic and contains no chemical residues.
