Raschera DOP is a semi-soft cheese from the Cuneo province in Italy's Piedmont region, made from raw cow's milk (sometimes mixed with goat or sheep milk). It has a unique square shape and a smooth and springy, elastic texture with a mild, buttery flavor when fresh that becomes sharper with age.
