The internet told us to stuff baked beans into a cookie… so we did. Our soft, gluten-free, dairy-free vanilla cookie dough is wrapped around a square of gluten-free toast topped with baked beans. It sounds completely ridiculous, and honestly, we weren’t expecting much… But somehow… it really works. The sweet cookie dough perfectly balances the rich tomato sauce, while the toast adds a little texture, creating a flavour combination that’s far better than it has any right to be. It’s weird. It’s wonderful.
