Danish Rye Cask Finish Single Pot Still – 46% ABV Limited Edition – 300 Bottles Introducing the Limited Edition Hlymrekr Saga Bottling, a tribute to the Danish Vikings whose influence helped shape Limerick’s early history. This release is limited to just 300 bottles. The journey begins with Cask No. HS-004, selected for its fine American oak. Carefully kiln-dried and flame-charred, the cask was prepared to elevate the depth of the oak and the subtle imprint of charcoal. It was first seasoned with high-quality Barbados Rum, imparting notes of molasses, soft spice, and tropical fruit. The cask then travelled to Denmark’s Stauning Distillery, where it was filled with their renowned Rye new-make whisky. Distilled in traditional pot stills from local barley and rye, the spirit contributed a warm and aromatic profile, bringing flavours of chocolate sauce, dried apricot, orange chocolate, fig, and waxy honey. On 23 May 2022, the cask was filled with our Single Pot Still Whiskey, originally distilled on 16 August 2018 and matured for 3 years and 9 months in ex-Bourbon American oak before its Scandinavian journey began. It then continued to rest until 12 May 2025, completing a further 2 years and nearly 12 months in the Danish rye cask. At bottling, the whiskey stands at 6 years and 9 months old, delivering a rich fusion of Irish pot still spice, Danish rye warmth, and rum-seasoned sweetness. Bottled at 46% ABV, it offers a beautifully layered and expressive character.
