Two Stacks Polaris Collection 4.1 Polaris 4.1 brings us into a new navigational direction into the exploration of Vintage Mash Bill Number 5. Resurrected by historian Fionnan O'Connor from the archives dated to 1892 and expertly recreated by the team at Boann Distillery. This exceptional Pot Still is an example of Irelands once proud tradition of the use of Oats (30%), unmalted barley (40%) and remaining fill of malted barley (30%). Fully matured in a single oloroso hogshead. 252 bottles. Nose: A delightful sensory journey as the sherry casks influence dominates the fore with treacle, raisins, gingerbread, followed by woody undertones, orange peel, and a soft hint of peppermint. Palette: If you can spare 5 minutes to leave the whiskey to air, it explodes into life. A combination of sticky toffee pudding, baking spice, creamy dates with a touch of leather like undertones. Finish: The sweetness subsides to reveal delicate oily spice notes, fig and dry coca nib.
