This unusual organic Rocambole hardneck garlic was originally discovered growing wild in Klamath County, Oregon, and has become a coveted variety among garlic growers and enthusiasts. The story appears to trace back to an abandoned homestead in Klamath County. Garlic was found growing wild near the site many decades later, and bulbils were collected in 2010 and carefully propagated. After several growing seasons, they produced the large, vigorous bulbs now known as Redneck Wild. It's a fascinating example of a garlic surviving on its own and eventually finding its way back into cultivation. The Redneck Wild we bring in is organically grown on a small farm in Snohomish County, Washington. The bulbs typically contain about 9–13 cloves and deliver the full, robust garlic flavor that Rocamboles are known for. In the kitchen, Redneck Wild is wonderfully versatile. Its pronounced garlic character makes it excellent for roasting, sautéing, soups, sauces, marinades, and other savory cooking, while garlic lovers can put its more assertive raw character to work in dressings, salsas, and other uncooked preparations. Properly cured hardneck garlic should not be refrigerated. Good airflow is important, so avoid sealed plastic containers or other storage that can trap moisture. Hardneck garlic naturally loses moisture as it ages. Because each bag is packed at approximately 1/2 pound when prepared, its weight may gradually decrease through natural drying. The cloves themselves will also become somewhat drier over time. Properly stored hardneck garlic can keep for months, although Rocambole varieties are generally best enjoyed earlier in the storage season. As the garlic ages, an occasional clove may deteriorate or develop mold, so for the best texture and keeping quality, enjoy it while the cloves are still plump and firm. Seasonal and limited: Once this year’s Redneck Wild harvest is gone, it’s gone until the next harvest.
