Tasting Notes: Dark Chocolate, Dried Fruits, Complex Process: Washed Overview This lovely coffee from Antigua was sourced through our good friend Christian, with Little Guatemala. It’s a traditional fermentation for Guatemala, and especially Antigua. This coffee is slightly drier in profile as compared to the Todos Santos. Processing Cherries are picked at peak ripeness, immediately depulped, with some mucilage left intact. 24 hours of fermentation. After that, the parchment is washed with clean water and left to dry on a patio, which can take anywhere from 10 to 14 days. The careful washing and clean water are key to a well-executed washed coffee. Production This coffee is shade-grown under native trees in volcanic soil rich with naturally occurring minerals. Taste Expect notes of dried and stewed fruits, with a rich caramel and dark chocolate undertone.
