Domaine du Pélican Arbois Savagnin Ouillé 2024 750ml

Savagnin is the Jura's signature white grape, and it is usually associated with the region's oxidative tradition, aged under a veil of yeast without topping up the barrel. This is the other way of doing it. Ouillé means the barrels are kept topped up, so no veil forms and the wine stays fresh, direct and fruit driven. Domaine du Pélican was established in Arbois by Guillaume d'Angerville of Domaine Marquis d'Angerville in Volnay, after a Jura Chardonnay convinced him of the region's potential. The vineyards are farmed biodynamically and the wines are made with minimal intervention, bringing a distinctly Burgundian precision to Jura varieties. The result is taut and beautifully aromatic. Green apple, lemon and white peach are lifted by white flowers, crushed almond and a stony, saline mineral edge, with a firm line of acidity carrying a long, dry finish.
