Fortunado was right; Amontillado Sherry is indeed rare and special, requiring years of careful biological and oxidative aging to create this phenomenal, fortified wine. Inspired by this layered complexity, we finished our 4-year-old straight rye whiskey for over 6 years in a 66-gallon amontillado sherry hogshead. Our signature whiskey's classic spice profile develops alongside notes of brown sugar, dried apricots, and antique wood. Rich flavors of honey-dipped dates, cocoa, and hazelnut pralines build over a subtle savory earthiness, giving way to a dry finish with a gentle tannic grip (it's to die for!). 98 Proof Aged 4 years in charred new oak barrels. Aged over 6 years in an Amontillado Sherry Barrel. Flavor profile: Maple toasted almonds, dried orchard fruits, worn leather, and a citrus bring finish.
