Before fermentation is complete, the wine is bottled without fining, filtration, or added sulfur dioxide. The natural sugars finish fermenting directly inside the bottle, trapping the carbon dioxide to create a delicate, fine, and entirely natural carbonation. This leaves a light deposit of sediment in the bottle, preserving the wine in its most authentic, unfiltered state.
