Enclume 2022

L'Enclume is a wine of fraternity, as it was created in collaboration with Yves Cuilleron. On the nose, the wine opens up with lovely notes of red berries, blackcurrant, and a balsamic touch 💦. After a good decanting, more floral hints emerge, such as violet and dried rose petals 🌹 The palate is incredibly indulgent, with the fruit bursting forth. Then, more subtle notes make their appearance. You can distinguish hints of peony and a touch of red currant jam. The freshness balances the flavors beautifully, making the wine clear and precise; it's simply sublime. Very limited availabilities. 2020 magnums available on demand. Region: Northern Rhône Grape: 80% Syrah, 10% Gamay, 10% Mornen noir Alcohol: 10% Total SO2: Traces. Service: 12°C For: 🥩 🔥🍖☀️🍕 🌮🍝 Tech facts: Manual harvest. Spontaneous fermentation. No added sulfites. No herbicides, no mineral fertilisation, no pesticides. The grapes were vinified as whole bunches and then aged in used barrels. Bottled without fining and filtration.
