Mortadella Stracciatella
SHAVED ITALIAN MORTADELLA STRACCIATELLA CHEESE TOMATO SAUCE MOZZARELLA & PROVOLONE THIN CRUST A couple years ago I was in Naples and stopped by a little bakery where they whipped me up a simple sandwich with things they had on hand. Nobody spoke English, and my Italian is 'non bene', so it took until halfway through the meal before I fully figured out what I was eating. It was mortadella. Mortadella is one of the most common deli meats across southern Italy, and it's one of their most beloved pizza toppings. I try to throw it on a pizza here one or two times a year. Because I'm trying to get y'all to appreciate the magic of mortadella. I pair it here with some fresh stracciatella cheese made with milk from our farm (thank you Belgioioso!). Stracciatella is the creamy inside of burrata cheese, and on a pizza it melts into the most glorious tiny puddles of creamy goodness. I hope you love the utter simplicity of this pizza. (Traditional mortadella has pistachios but this version is nutless)
