Cherry Grove Farm, established in 2002, is located on land that has been in the Hamill family for over a century. This venture stems from the Hamills’ deep-rooted love for their land, commitment to the Central Jersey community, and dedication to responsible, sustainable food production. Rarebird is a delightful creation that embodies the essence of pasture with a touch of funk. Crafted in small batches, it undergoes a two-month washing process with a salt solution, guiding the cheese to achieve its ideal ripeness. The result is a robust hunk of cheese boasting an enticing blend of savory flavors with a texture that varies from buttery to custardy. Flavor notes include roasted peanuts, hazelnuts, bacon cheeseburger, soy sauce, long-simmered beef broth, caramelized onions, and shallots.
