Ethiopia Hambela “Wush Wush”
Ethiopia Hambela “Wush Wush” by Power Coffee Tastes: Fruit bomb, watermelon candy, berries Variety: Wush Wush Region: Oromia Process: Anaerobic Natural Altitude: 2120 m Importer: Keffa Coffee The Wush Wush varietal is one of Ethiopia's most prized and rare coffee treasures, named after the town in the Bench Maji zone where it was first discovered. This particular lot comes from farmers working at extreme elevations in the Oromia region, where the unique terroir creates exceptional complexity. What makes this coffee extraordinary is the 120-hour extended dry fermentation process. After selective harvesting of only the ripest cherries, they undergo a controlled anaerobic fermentation in sealed containers for five full days before being moved to raised drying beds. This extended fermentation develops the explosive fruit-forward characteristics and wine-like complexity that Wush Wush is celebrated for. The 350 member farmers of this cooperative have dedicated themselves to preserving and propagating this rare varietal. Many of these trees are over 50 years old, producing lower yields but extraordinary cup quality. Keffa's partnership began in 2016 when they first tasted a sample that scored above 90 points—they've been securing the best lots from this region ever since.
